I'm getting ready to brew my second batch. Got a summer ale kit and want to add coriander and fresh ginger to the kit which includes bitter Orange and lemon. Any suggestions as to if this is a good idea and the amounts to use?
 
I just did a belgan wheat with coriander and bitter orange peel. The recipie called for 1 OZ each added to the soaking grains (1 hr at 155) crack the coriander first. I used a small food processor, although the coffee grinder would have worked better if I could get the &^^% coffee out of it first.
 
If it's the Brewer's Best summer ale kit,all that's already in the small bag that came with it. It's the one with the bitter orange zest,lemon zest,& spices. Trust me,it's in there. That was my wife's 1st brew in her new BB ale pale I bought her for NHB's day. Added at the last 15 minutes of the boil gives a nice light flavor on the back.
If we do this one again,I'm going to steep all that dried stuff in the lil baggy before that 15 minute boil in some "tea temp" water. Should intensify those flavors to a more exceptable level,imho.
 
I recently made something similar... I added grains of paradise and coriander, along with FRESH lemon zest.

I say go nuts with the coriander... like 3-4oz. I used the recommended amount of orange and coriander in my Belgian... the orange was STRONG and the coriander was pretty weak. I would have halved the orange next time, and tripled the coriander.
 
3-4 ounces of coriander sounds really high to me. That's going to be 1-2 cups worth.
 
That is a lot of coriander. I would keep the coriander to 1 oz.go lighter on the bitter Orange. But that is for my taste.
