Adding soil to my raised hop beds

I want to increase the depth of my raised hop beds that are currently built with 2x8's. The plants are several years old and have a good root structure but I believe they need more good soil due to the clay base below. I would like to add another section of 2x8's to the raised beds and add an additional 8" layer of soil. Do I need to replant the roots , or can I simply cover them with the soil this fall after they have been trimmed back?
 
This is pretty much universal wrt transplanting: you want the crown to end up at the same elevation relative to grade as before it was moved.

As well, the bigger the root ball moved, the better...
