Hello out there, I just purchased a Winexpert Eclipse Chardonnay Kit to make for my wife. I have made their Vintners Reserve Chardonnay in the past and she was not a huge fan. She asked me to try a higher quality kit. So to my luck my local home brew store has some Eclipse kits up to 60% off.

My problem now is that I am home I decided to check if it is oak'd (she likes oaky chardonnays like Toasted Head and Kendall Jackson) this particular kit is not.

So I am hear looking to anyone willing to help share some thoughts with me on how much oak I should add in hopes of not throwing my money down the drain with this wine

Thanks in Advance!

You could start with 2 ounces of medium french toast cubes for the 6 gallons. Taste after two weeks, and thereafter until it's either a little bit too much or a little more than too much. If it's not enough (but it should be), you can add a little more of the oak cubes.
You could use chips, but they give up oak faster without as much depth, so you'd want to taste them sooner.
