Whats up y'all. One more basic question that I was looking for a straightforward and up to date answer instead of searching. I have a low abv Sweet Stout (haven't taken any readings yet) started at 1.051, and I was wanting to split it up for experimentation. I was thinking of racking off two separate 1 gallon growers to do some additions. That would leave me with 3 gallons to let rest and taste the base recipe-I'd also be force carbonating these 3 gallons later. I planned on bottle conditioning whatever I got out of the one gallon batches, separately and maybe even a blended bottle you never know. So enough of my back story here are my main questions....

I wanted to know how much to add (reasonable range) and how long to age on the following items, also any preparation tips would be great, plan on doing all this on Sunday. Southern Grist 2nd Birthday tomorrow.


Growler 1:
Wood cubes (BSG Hungarian I think?)(4Roses soak maybe)
Dried Chilis
Vanilla beans
Cacao Nibs
Cinnamon

Growler 2:
Dried Elderberries
Vanilla beans

For growler 1 I'd do the oak separately. I've used 1.5oz for up to 3 weeks in a 5g batch. Just use a thief and pull 1oz samples after a week, pull the cubes when it tastes right to you.

Never used chilis. Someone else will have to answer that. I'd just err on the side of caution.

As for the cinnamon, vanilla bean and cocoa nibs. I'd probably do a tincture using an few oz's of vodka. I've used all of these at one time in the secondary but balancing them with the other two additions might be difficult without being able to add them independently.
Cocoa nibs .5oz to 1.5oz
Vanilla beans a whole fresh bean
Cinnamon a full stick.

And I've never used elderberry. I do have the brewing local book at home though, has dosing suggestions. I'll look after work.
