I am currently working on a holiday ale. OG was 1.110, I took a reading after 7 days and I am at 1.020. I used Trappist yeast so it should be good up to about 15%. I checked this morning and it looks like I am down almost a galleon of water in my 5 galleon batch. My understanding is only water evaporates off so is it safe to add that amount back to the brew without watering it down?
 
Did you start with 5 gallons in the fermentor? Unless you are doing an open vat fermentation, evaporation would not be a consideration.

Look for a leak if you are using a bucket or fermentor with a spigot and you started with a volume of 5 gallons.
 
Could be a small leak from the airlock. I just bought a new lid yesterday because I didn't trust that one. It was close to 5 gal when we started. Was a lot of condensation on the lid when I pulled it off today. We'll go with what we have then. Thanks.
 
There is no way you could lose a gallon of liquid in a week or two due to evaporation through a tiny gap in the lid. Most lids on Ale Pails don't form a very good seal anyway, and I've never lost that much volume. I would check and see if the bucket itself is leaking.
