I am currently working on a holiday ale. OG was 1.110, I took a reading after 7 days and I am at 1.020. I used Trappist yeast so it should be good up to about 15%. I checked this morning and it looks like I am down almost a galleon of water in my 5 galleon batch. My understanding is only water evaporates off so is it safe to add that amount back to the brew without watering it down?
