Nothing quite as intriguing as peering into the world of the yeast cell during an active fermentation. It's crazy to think that there are billions and billions of cells in a 5 gallon batch of beer (well, wort becoming beer), all working together creating a vortex of co2 and a crown of kräusen for your future brew.

Sat and watched my hefe ferment last night in the carboy. The yeast putting off enough co2 to create a current. It was almost hypnotic...like staring at a lava lamp.

I love this job (well, hobby(for now)) :rockin:

I sometimes sit and watch the action in the fermenters and listen to the sounds of the bubbles in my blow off tub for a bit.
 
I use buckets, but at the height of fermentation you can definitely see the storm raging inside if you're in the right light (think "mood lighting.")
 
I have always used a bucket up until my most recent brew, I had no idea what a beauty all of those bubbles were. It's like watching yeast porn!
 
Ya'll sure it's the CO2 creating currents? I thought is was the bio-heat of the yeast creating convention currents.

But it is indeed gorgeous to watch.

My latest batch has been in the primary for 13 days and I am still getting bubbles every 5-6 seconds. The krause stars to let up and i can see the beer through the bubbles and the the next morning there is a full inch of foam on top.

When I start to see activity like this is when I would get that airlock off and use a blowoff tube for a few days...I have gotten to a point where I only use airlocks on my secondaries
 
My girlfriend just shakes her head when she catches me staring at a glorious active fermentation. Sometimes I will get a little Gene Wilder on her and start saying " Alive! It's alive! It's aliiiiivvvve!"

HAHA! Dude mine too! She likes beer and brews with me, though.

But yeah, she'll definitely make fun of me when I get too obsessive. :D
