I'm getting ready to brew an American Wheat with 5 lbs of pale malt and 6 lbs of wheat malt. Using EZ Water, adding 5 oz of acidulated malt (2.8% of total) and a little Calcium Chloride will get the mash to 5.6.

How much acidulated malt is safe to use?

Also, do rice hulls have any affect on the pH? If so, I'm not sure how to enter them into EZ Water.
 
I've heard up to 3% is fine. I think I had about 5% in my last wheat. Haven't bottled it yet.
