I've been letting my hefe ferment for about a month now. The OG was 1.041 and after just under one month, the gravity is down to 1.010, which I understand brings the ABV to about 4.1%. It seems a bit light and tastes a bit light as well. However, inasmuch as it's been fermenting about a month now, I can't imagine that i should keep it in the carboy much longer and should just bottle it. Does this seem right? Or do you think that the final gravity should be able to go lower than 1.010, which doesn't seem all that low to me?
