Okay, I have my bottles full and about to start capping. I take a swig and WOW it's thick and syrup-ey!!! It's a Bourbon Vanilla Porter but almost all my beers always seem almost too sweet and thick? What am I doing wrong and how can I fix this batch? If you know please reply asap! I have these bottles sitting on my Kitchen cabinet. It is a full 5 gallon carboy. Thanks in advance.

What were the starting and final gravities?

My guess is that carbonation will do wonders for this beer. I recently had the same experience. I bottled a beer that seemed really thick, but now that it's carbonated and aged a little it's great.
 
I would cap it and give it a good month in a dark closet, flat warm beer will always taste funky.
