Greetings to you all!

I am new to Homebrewing, I have brew easy stuff, from extracts and recipes, at the moment I'm just trying to learn, and see what happens.

My goal is to brew my own all-grain recipes!

But, as a learner, and new in the forum, here is my very first question.

I have read a lot about hops, their differences, properties and qualities...
But, is there really a big difference between them? I mean.. really big and extremely noticeable?

There can be a BIG difference in hops, depending on what variety you've got and how you're using them. Many have very distinctive flavors and aromas, while some just impart good bitterness. Probably the best way to learn about them is to use the search function to look for posts on individual hops.

I know I've seen a chart that graphically displays the different characteristics of different hops, it might be in Brewing Classic Styles, but I'm not sure.

Hops are all over the place. Some are floral, some are citrusy, etc...

I was just about to respond in your intro thread about growing hops. I would imagine the climate in Mexico might be conducive to hop growing.
 
The hops can make as big of a difference in your beers as the malts or yeast. Next time you are brewing with more than one hop variety, open both packages and smell each and try to notice as many differences as you can. It's a great learning experience and they smell great too!
 
hops can be grouped into categories based on flavor and aroma. if you use hops from the same group there wont be that big of a difference. but if you use hops from another grouping there will be a very noticeable difference.

Somewhat true.

But there are MAJOR differences between American Northwest, German Noble, and British flavor hops. Brew the same grain bill with each type of hops, end up with 3 different styles.
