I had a fantastic night tonight, I think it went well. For those who are unaware, I have just started brewing about 3 weeks ago. Anyways, I designed a DIPA in beersmith I brewed tonight. (is an alteration from the original recipe since Amarillo is non existent right now!)

Anyways, I thought it was a successful night, I celebrated by pulling my Southern Tier Imperial Oat from the Cellar, and I am not finishing the night off with a Founders Porter(best porter I have ever had!)

Heres my night in a nutshell

Final reading at about 76F(hydrometer calibrated at 70 so a bit off) 1.084 or so (pretty damn close to the calcs in beersmith!)

For my primary this time I am using the Mr Beer again, but I went to my LHBS and purchased 225 bucks worth of stuff which was:
-6.5 gal 1 stage bucket fermenter with bottling bucket and all the bells and whistles(capper, racking cane, spring loaded bottle filler etc)
-25 ft Wort chiller(was thinking about doing a homemade one but after calculating the cost id be saving like 5 bucks, meh. it also comes with a faucet adapter)
-All the specialty grains(chocolate, black barley, black patent, crystal 60L) for my 5.5 gal Vanilla porter, plus 6 lbs of light DME and 3 lbs x lite DME, 2 vanilla beans, and hops (Northern Brewer, Fuggles, Williamette)
-3 gallon better bottle for use as secondary for my small high gravity batches
-24 inch plastic spoon
-1 gallon glass jug for starters

I will be racking it to the better bottle next week on 1 oz of cascades

I just woke up and took a peek downstairs, I knew it was a good idea to not put it in my closet with no containment

yea its all good now, I wiped everything up, and it foaming out the top by evening of thursday. I will probably never use the mr beer again, now that I bought a brew bucket kit with bottling bucket. I am going to use it tomorrow for the porter, the starter is already done and cooled down. About .5 inches or so of yeast at the bottom of the jug. plenty.

I made sure to buy a siphon hose today that will fit on my econolock for a blowoff tube for tomorrow, just in case. Also got a wine thief. I will probably be brewing half batches in the 6.5 gal brew bucket in the future (way less of a chance of blowing off) then racking it to the 3 gallon secondary bottle I got. I really look forward to making a lot of smaller imperial batches in the future. :rockin:
