Hi All thanks for looking in.. I have a jug of apple juice I used J Keller's recipe. Yooper had posted it too... Anyhow, I am at about 7 weeks and noticed that the airlock has finally began to neutralize where the star-san liquid is no longer 'pushed' to the exit side of the lock. Rather an even keel where the liquid is split even (see pic -1000 words)

I see many mention racking to clear further, however with brewing beer, and that has become a antiquated, do I just rack this to two 1/2 gallon Tequila bottle(s) and fridge it? How about back sweetening it? Is there another solution to adding sulphite? OR can I just as mentioned, rack, sweeten, and fridge it?

Unless you prevent the yeast from fermenting any added sugar simply adding sugar does not sweeten anything but the appetite of the yeast. You need to rack and then once the gravity is absolutely stable over say three weeks (watching the height of the water or star san in your airlock really is not very helpful although I imagine that can be an amusing enough activity if the alternative is watching cable TV), then add K-meta and K-sorbate per instructions. You can then add sugar to back sweeten.
