Hey all, I am inexperienced homebrewer and looking for a bit of insight on whether I am safe to bottle my mead or not. I started out making a few successful 1 gallon batches that were all perfectly stable. 7 months ago I decided to try my hand at a 5 gallon batch. I was getting ready to bottle it today, assuming that 7 months was more than enough time for the yeast to have run its course and stopped producing Co2/Alcohol, but noticed that the mead was still quite sweet and that my airlock was letting out bubbles still once every 1:45 minutes. I got nervous and replaced the lid/airlock to not accidentally create 30 bottle bombs. Does this sound like my mead is still active? Most sources I've read say that fermentation should be safely done after at most 6 months. I did use a bit too much honey so are the extra sugars making it unsafe to bottle at this time? Thank you!
