Hello, I just had a solid 7 day primary fermentation, this is my 5th batch, all the others went for 2 1/2 to 3 1/2 days of strong primary fermentation,
I did several things different on this batch, first I reused grains after drying from other batches, and steeped 3 batches worth of used grains, and 45min steeping instead of 30min, and I did a yeast starter for 24 hrs after washing used yeast from another batch, I also used herbs only, without any hops.

Anyway just wanted to say WoW lol, I love making Beer !

Edit: Also forgot to state that I just dumped the grains into the cooking pot instead of using a steeping grain bag, and used a strainer before the boil.
 
No hops, used grain, did you use any extract, or did you sub sugar to keep the cost really low.
 
Sounds like fun. Technically a gruit ale and not 'beer' due to the lack of hops, but I admire your resourcefulness. Let us know how it turns out!

Anyways I definitely recommend just using more grain rather than reusing it. It gets all icky when that lactobacillus takes over, soon your beers will have a minor sour mash profile. Yea, it technically isn't beer, so while it may be good I say if you aren't a fan of hops go with a beer with few additions at the 60 and 45 minute mark to get you the bitterness you need to balance a beer without all the hop flavors.
 
Re-used grains!? How is that possible if you've already extracted the sugars from them the first go around?

Oh, and Lacto. Blech. You sir, are brave!

If this turns out the be the best beer you ever made you are going to have a life time to try and recreate it ;)

I used 6lbs of DME also, and I did read that some brewers use to do this same thing in the old days, they would steep the grains for one batch then re-steep the grains for a lighter beer 2nd batch.

Yes I know the herbs are gruit herbs but to me, its beer.
Mugwort, Yarrow, Rosemary went in this batch.
This is my 2nd gruit ale and 5th beer.
In about 4 weeks I will get to drink this one and if all go's well I will not be using hops anymore, cant stand the taste of em and hops make my wife sick.
I thought the smell while cooking wort with hops was good but the smell from the wort with herbs in it was freaking amazing, and the taste of the wort flat out blew me away, I will be taking a hydrometer reading next weekend, cant wait, yes I drink every sample, Ill post about it.

Have fun, think outside of the box, thats how great things are made!

You are way more adventurous in experimenting with your beer than I am. If I was to try something like that I would get nervous in committing to more than a couple of gallons in ingredients even with the reuse.

I wouldn't expect that you got much from the grains. And no hops!

Let us know how it turns out.

I was asking my wife what we should call it, she (as innocent as the day is long) said how about Sloppy Seconds, I started laughing very hard, and she was standing there saying What? What did I say? Whats so funny? so I had to explain what it men't, and yes me having a warped sense of humor thats what its named now.

I have the recipe written down, every Ingredient and how long they were steeped for, temps, times, amounts, this was common practice from what I have read, shouldn't be to hard to recreate. (fingers crossed)

No smoking herbs while brewing here, Not sure if Mugwort, Yarrow, or Rosemary are any good to smoke lol

The wort after steeping was very thick and rich, I used 3 times more grains than any other batch, to make up for the loss of it being used, after brewing this, I don't thing I needed that much grains to come out with a lighter beer, I think its going to be a full rich beer, Ill let you all know in about 4 weeks.

You only live once, if you live it right, once is enough, Jump in head first! lol

Definitely not beer by any definition. Absolutely cool though. Give heather tips a try sometime. I have spruce on my list also.

I have been thinking about getting some heather tips, can you give me some insight of what they taste like in a brew?

Was going to get some rose hips, chamomile, and some others too, I could only find limited information describing what they taste like on the internet.

Been several years. I only had a couple as I brewed it for a friend with a hop allergy. I only remember that it was great.

You might taste Wolaver's Wildflower Wheat to get a sense of chamomile. Between chamomile and honey you get a huge honey (and wildflower) smell and taste.

Also, I'd suggest you make hot tea out of those herbs because that is very revealing to their taste, and it should give you some ideas. Rosehips turn the water reddish and has a sort of acidic taste but pleasant and sort of fruity...to me it sounds like it could work in beer with the right recipe. Sounds like some creative stuff you are up to!

Hello jambeer, Thanks for the great tip on brewing tea out of the herbs before using them in a batch, sounds like they all will go good in a wheat beer.

I just bought a Froach Heather Ale. I have not tried it yet but I think it is all Herbs (and no hops) and it claims to be 2000 years old (or something like that).

Nice, can't wait to hear all about it.

Tasted 2 of mine yesterday and there a bit strong on the on the bitter/astringent side, very herby, I used 1 oz each of the herbs in those batches, next batch I will only use 1/4 to 1/2 oz of each, 1oz of each was the recommended amounts on the gruit ail site.

Froach Heather Ale:

Recipe: 2000bc therefore 4000 years old...

Taste: Short version: Good.

Taste: Longer version: More like a Cider than an ale to me. Kind of an apple / ginger sparkling cider taste feel. Tasted good. Fun to drink. Different.

I had a Lamboc at a tasting. I felt the same way.

Here is a noob statement, but it has me trying to put my finger on what makes the difference between those and other Ales...

I finally figured out the name for my honey/wheat saison herb only brew, Im calling it "Funkelweizen". lol

I keep calling the saison taste funky when my wife and I talk about it.

The other herb brew that we have is named "Sloppy Seconds", I give my full credit for that name to my (innocent as the day is long) wife, when asking her about names for our reused grain's herb only brew that popped out of her mouth, I was laughing so hard and she had no idea what that meant.
