My first brew was Cream of Three crops. This brew was good at two weeks in the bottle, better at 3 weeks, and started declining at 4 weeks. At 5 weeks it has a bit of a strange taste. I'm not sure how to describe it. It isn't bitter, kind of a bit like a sourness that lingers after a taste. The beer is super clear and has a nice head. I have been aging the bottles at ~70 degrees in a closet.
