Hi All,

I'm several batches into my all grain career, but have kept things very simple, just SMaSH IPA's so far to get my process down and to better understand individual flavors.

My next batch is going to be an American Stout, but I want to continue to keep it simple, so I'm aiming for just 3 grains. Almost all of the Stouts I find on the forum are much more complex with 6+ different types of grains.

I'm thinking of using Marris Otter as my base, at about 80%. What other two grains will best get me started?

How about the below for a 5 gallon kettle target:

80% Maris Otter (3.6 kg)
11% Crystal 60 (0.5 kg)
9% Roasted Barley (0.4 kg)

OG of about 1.055 (@ 78% eff.), SRM 38.
 
Or you can just brew a strong (1.050-1.060) dry stout. 70/20/10 MO, flaked barley, roast barley, and use American hops/yeast.

Or if you want a 3 grain stout, just brew a dry irish stout.
