Well, I started my 2nd batch finally. I have to thank everyone for the advice on my first. My ale came out awesome and I've gotten compliments on it. Its definitely not the best beer I'll make in my life but I have to say its not just good for my first beer...its just really good!

So I have my 2nd started. I went with an oatmeal stout which I'm very excited about. The only concern I have is I had some boil over (I learned an important lesson about walking away...) but I don't think I lost too much.

I still brought it up to 5gal so I understand I may have a slightly weaker beer but I assume that's really the only major consequence? I had not added my hops yet.

Yes if you lost wort and added water back your gravity will be lower, but like you say it won't be much. Did you take a gravity sample before you pitched your yeast? You could compare that with whatever the recipe says the OG should be. Also, you should get Fermcap-S for boilovers, that stuff is amazing! I put 3 drops in right when the boil starts and you can just watch the foam retreat and disappear, no more boilovers!

Liquid caps of gas-x will also work as they are pretty much the same thing. Reduces boil over and blow over.

(Never use the tablets. They have other things in the hard tablets).

No, I didn't take an OG...I have the hydrometer but I really never think about it 8) I really should.
