Would a 15 gallon batch be too small to just ferment in w/ a 27 gallon conical? Got a new setup together finally w 50 gallon blichmans and a electric brewery bcs 462 setup. For the time being we are just planning on doing a few small batches to get our recipes down and likely just throw into a few carboys in a fermentation chamber and then bottle. Then probably just fermenter to bottle until we get a keg process setup.

2. Should batch sizes typically be 20 gallons or can we go a bit bigger with a blow off tube (not sure how much head space will be needed w the bigger batches)?

ANY recommendation/tips would be greatly appreciated (typical fermentation time for ales etc)

Thanks!
John

No problem. Once you get to a size over about 15 gallons, hydrostatic pressure starts working in your favor regarding batch size, so pushing the limit is a reasonable thing to do.

You may consider increasing your typical fermentation temps slightly to account for decreased ester production.

Always remember to remove your airlock and blowoff hose before opening lower valves on the fermentor. Unless you want to suck in all that nice starsan.
