Pitching the yeast (Imperial Bubbles) into 5 gallons of heirloom apple cider (Scott Farm cider, Brattleboro, VT). Decided not to treat with Camden tabs. Also adding 2.5 lbs of my Dad's honey. Adding yeast nutrient. Hope it all works out!
 
I pressed another 6 gallons of mixed apple&pear cider yesterday at a church function. Kept 2.5 gallons, treated with metabisulphite and pectinase last night, and this morning added 4 cans fajc and 2.5 lb blueberry honey. OG 1.118, pH 3.1. Added nutrients, oxygenated, and pitched 2 packets of Safecider AB-1. After it's finished fermenting I plan on adding a little flavoring (oak,vanilla, cinnamon) and rack it to a 3G plastic carboy. Then out to my cold garage where, if we have a normal year, it'll freeze in January. Applejack.
