2 five gal. recipes
Grain bill 30 lbs.
Batch #1
2.5 lb. Belges Carmel Wheat
5 lb. White Wheat malt
2.5 Best light Munich
5 lb. Canada Malting 2nd row

Mash in 14qt. at 155* and bring down to 148* let stand for 1 hour; batch sparge at 14qt. at 178* rinse grains and begin boil.

1 1/2 oz Nugget at 30 min. (home Grown)
1/2 oz centennial at 30 min.

Primary add Hefenweizen #5 Ale yeast-380-
ferment two weeks
rack into secondary on top 3 oz wet cascade hops(home grown)
sit for four weeks
2 weeks after first batch brew same recipe and rack on top of trub and yeast sediment from the first batch, ferment 2 weeks and rack on 2 oz dry cascades, coriander and clove(? on how much, I'm thinking 1 oz coriander, and a few whole cloves) in secondary. two weeks later mix both 5 gal batch's with two cups corn sugar, bottle and let sit for one to two months.
then enjoy
 
I will also be gathering willamette and Magnum hops that could maybe work as a substitute for the hops I have placed in this recipe. Let me know If you have any Ideas on how to critique this recipe.
 
Batch #1, 5 Gal.
Grain Bill
2 lb. best light Munich
5 lb. red wheat
5 lb. second row

14 qt. mash in at 150*
14 qt. mash out at 178*
batch sparge
Hops-
1 oz. Nugget at 30 min
1/2 oz. nugget at 30 min

Primary pitch Hefenweizen #4 ale yeast 380
ferment 2 weeks and rack into secondary on top 4 oz wet cascades
Batch # 2
Grain bill
2 lb. Vienna (Germany)
5 lb. red wheat
5 lb. 2nd row
same mash schedule and hops in boil
rack on top of yeast sediment from batch #1 and ferment 2 weeks
rack from primary on to 2 oz dry cascade and ferment another 2 weeks.

Mix batch #1 and #2 with 2 cups corn sugar and bottle. Let stand for 2 months and enjoy!
 
My imperial wheat after fermenting for 9 days in primary, racked on top cascade hops cloves and coriander. Smells great!

This is the second batch of the two. I racked from my brew pot on the yeast and trub from the first batch and fermentation took off immediate! I recommend this method for anyone who is looking at getting the most out of their yeast.
