absolutely. you would be limited to how much grain you could stuff in there, but you make up whatever gravity you need with extract and top off with water to make up your volume

you could do 5-gallon batches that way
 
That depends on your efficiency and the desired OG of the beer. You'll probably be able to do 3-gallon batches with up to 1.055-1.060 OG, depending on efficiency.

Of course, you can always add extract and revert to a partial mash for bigger beers.
 
Thank you for the tip! I was trying to make an equipment profile in BeerSmith and it looks like it has me do a 1.5 gallon mash with 4 half-gallon batch sparge steps. Is that necessary? Is there a better way to do it?
