So, I'm stepping down to 5 litre demi-johns, so I can experiment some and maybe try a lager.

To test the process for making small batches I have run a recipe through beer calculus...

Batch size: 10 litres
Boil size: 10 litres
Boil Time: 30 min

1Kg of Extra Light DME
250g Corn sugar
14g EKG 30min
14g EKG 10min

I also have a bit of crystal and caramunch maybe I could put 50g of each in to give it some colour.

I'm aiming for a light coloured basic ale, just as an experiment.

Any comments/suggestions?
 
Do you think that 100g steeped at 155F for 30 mins is right for the caramel malt?
 
So for process I'm thinking:

Raise about 12 litres of water to 155
Steep grains for 30 mins
Add 500g DME
Bring to boil/through hot break
Add 14g hops
Boil for 15 minutes
Add 14g hops
Boil for 15 minutes
Add remaining 500g DME
Crash cool in sink of freezing flowing water to 20-24C
Take OG reading
Syphon to demijohns using the bottling wand.
Rehydrate half the nottingham yeast (6g) in warm water for 15 minutes
Add half to each, plus 1 drop of yeast nutrient

(I've been boiling my hops in a bag... there are obvious advantages with limited 'flotsum' in the wort to filter, but are there any disadvantages?)

Cool and dry. I had left half a pack of dry yeast in my refrigerator for 6 months or more and pitched that along with a fresh pack. That batch really took off quickly.

I store bulk dry bread yeast in my refrigerator freezer and it makes bread even after quite a few months. Dry yeast is pretty tough.
