In my experience, I have found that any more than half of a pound of honey malt adds a bad flavor to the beer. Kind of plastic-y? I might add a touch more honey - up to 2#.

Other than that, you have a pretty solid idea going - nice and simple. Should be delish!
 
+1 on the honey malt, I just finished drinking a honey blonde and used 6 oz of honey malt and it gave a very sweet honey flavor to it. I didnt use any honey in my recipe either
