I just made my first sour last night. It was a Flanders red. Everything went great but I had one question. Its in a brew bucket for primary fermentation when I switch it over too secondary can I use a better bottle or would a glass carboy be better.
 
Glass will give you less acetobactor. Buckets tend to be too permeable for long term fermentation.

Give that primary fermentation plenty of time.

i think when the OP was talking about plastic, he meant better bottles. consensus around here seems to be that better bottles are fine for long-term aging.

you can certainly give primary lots of time to finish, or you can rack it off on the early side. this should leave a few more sugars for the bugs.
 
Never done a long term ferm in a better bottle, only barrels. Would be interested to do a side by side with glass. I'm always wary of plastic. No good reason I guess, just not a plastic fan in general.
 
I would love to ferment in a barrel but I don't think I have enough space for one. What is the smallest size I could get and where? Also thanks for all of your replies.
 
There are definitely 5 gallon barrels available, but I thought I read about someone using one as small as 3 gallons? I am in the same boat, no room for a barrel.
 
I have some tart of darkness and consecration clone in both glass and plastic. That side by side is about a year away from being answered...
