Anyone did a 100% vienna lager? Im about to do a a vienna/hallertau smash lager just wanted to get your tasting notes? I have made a vienna lager many times but never with 100% vienna always had a blend of pils/vienna or 2 row/vienna..cheers
 
My Vienna lager is 100% Vienna malt, done with a double decoction. It's great!

Cool..im gonna give this beer a run with a simple 149*F infusion..decoction probably brings out some great Melanoidins but im too lazy hahaha..cheers
 
I've tasted someone else's Vienna SMASH beer. It was excellent. It won our SMASH beer contest in our local homebrew club. I think it might be the very best malt to SMASH with.
 
I'd think you'd want to add some Chrystal malt and Carafoam or Carapils to add body/head retention/mouth feel. Otherwise the beer lacks a bit of dimension. I tried a recipe once with 100% 2 row and found it a bit lacking in body and a bit flat. But, this was without step mashing. I'd think you'd add complexity with trying to do some magic with different rest temperatures... i.e. getting all the different enzymes to work for you.. proteinase, peptidase, alfa and beta amylase etc..

Edit I personally am a big fan of perl/northern brewer combination, and throw in some dry hopped citra/chinook. Spicy and Juicy!

Hands down, Vienna is my favorite malt grain. Vienna wort produces a beautiful golden yellow color and toasty sweet flavor. A darker commercial beer from Devil's Backbone Brewery in rural VA is one of my favorite examples of a beer brewed with Vienna malt. Hard to come by in the stores near me in NJ, but when I find it, it's MINE. :D

That Devils Backbone dark lager is good! I've only had it a couple of times at bars.

Bro, it's a SMASH - single hop and single malt :)

But a little crystal would be nice.

Yeah but im looking to make a smash vienna and if i throw other malts in its no longer a smash but for a later batch i will throw in other malts cheers

I've not done a 100% Vienna lager yet. Vienna is a great malt. It brings a lot to the table.
 
I just did a batch of all Vienna along with several additions of Citra and it has turned out just wonderful, got the recipe from a fella in the local homebrew club and it is one that he keeps on hand for his every day beer and I believe that is what I am going to do. Go for it!
