10 gal yeast question

Ok- In about 4 months I get home. I wanted my wife to start a 10 gal batch of Eds Apfelcrack.

For ease of use we are going to use a 10gal ferment bucket and some Topps apple cider along with 4lbs of corn sugar.

Queston reguarding yeast is

I want to use either Safale Us-05 or Safbrew T-58.

I was thinking since its 10 gallons using 2 packets?

Shes gonna start it 30 days out from my return date and well keg it when I get home. Then maybe use the yeast cake to start another batch

Ha!!! Apfelcrack. Too funny. I would think 2 packets of yeast would kick it off nicely.

2 packets of the 05 is fine for 10 gallons of that. 3 won't hurt but two will work.

maybe Ill add 1/2 teapsoon of yeast fuel
