I decided to brew a couple of one gallon exp. batches for the winter time and I only have a 5 gallon corny keg. I carb with a 20 oz. paintball tank that I converted. Since I want to carb this one gallon in the keg, do y'all think I will have enough CO2 to be successful or will there be too much head space?

The only problem is that you'll blast through all your CO2 purging out all the headspace. With 4 gallons of headspace you'll probably want to purge many times to make sure you get all the O2 out, and if your lid seal is a bit finicky and you need to crank it up to 30 psi or so you'll waste even more. I don't know if 20 ounces will be enough. If it were me, I'd just bottle the one gallon.
