I am new to kegging and I have a beer that tasted really good but then the cabination got to high ( my falt) has a real bite to it now. How do I adjust the carb level? Just let the pressure off for a few days or what?

Yep, just keep dumping the head pressure on your keg until it tastes right. I have to do this when naturally carbonating with a spunding valve. I over carbonate a little then set it to vent anything above my wanted CO2 level.
