So I usually make a few island mist type kits a year as the girls that come up to camp like that sweet flavor. I am almost threw with a island breezin black cherry. I racked it out of my fermentation bucket into a carboy to rest before bottling. I had some of the top off I pulled aside sitting there. Hate to waste so a sip later and it's just kinda blah. Grape-ish flavor since it didn't have the sweetner/cherry flavor added. It was just the base initial ferment. A little sugar later and and my girl thought it was fantastic.
So the question is....how to duplicate a regular size batch? Would I just make another kit, add the finishing packets as directed skipping the sweetner/flavor pouch and just replace with white sugar?
I guess what I'm looking for is a sweet desert type mildly grape flavored wine.
