Can someone point me in the right direction as to what is a decent/cheap pre-made product for controlling stir plate speed? I am going to make my own stir plate but just need something to control the fan speed. I have decent wiring skills. Thanks.

Of course. If you go to the 4th picture on Amazon it shows you the underside which is labelled. So from top to bottom is as follows power -, power +, motor+, motor -. So you just wire up the power positive and negative wires to the power + and - terminals. Same thing with the fan. black goes to negative and red to positive. It's also done with screw terminals so no soldering required.

What speed are you guys running your stir plates? I'm planning on building a stir plate with a 22V fan and speed control. The fan is similar to a computer case fan, but is an AC 220V/240V 50/60 Hz 0.10A model I picked up for about $4 at a local electronics store. This gives me an easy wiring option without too much extra circuitry and I can use it anywhere, including the standard EU 220V plug on my brewing and distilling controller rigs.

I setup up my distillery rig to control mash temps via PID, so it is convenient to use a standard 220V fan.
