Hill Farmstead Everett stats

Listed on their website http://www.hillfarmstead.com/ancestral-series/everett-porter.html

This is listed as a 21°P and 7.5% ABV.
Converting from Plato to SG this is 1.087. Finishing at 7.5% would make the final gravity 1.031. This seems really high. Maybe its the formulas used that are messed up or the stats for the beer are wrong.

On purpose that the FG is high, or the stats are messed up on purpose?

That beer has a very thick and creamy mouthfeel - I'm sure if you degassed a sample it would be around 1.031.

He has a knack for chewy non-farmhouse beers, Edward finishes around 1.015 for a pale ale.
