    Milky haze in the carboy?

Looks like you've got some sort of bug working, in my opinion. Ride it out for a year or two, could be the best thing you'll ever brew. I love sours.

Biermuncher's Blue Moon Clone is next up for me for this very reason.

I Wish Someone told me before I started homebrewing...

....that if you have access to fresh craft beer, you're just wasting your time and money, not to mention making a giant mess, but goddang if it isn't fun somehow.

Latest IPA: Need Input on Sour Citrus Smell?

Think the airlock smells funny on finished beer, pop the lid and stick you nose in there real quick. You'll get so much co2 and alcohol you'll want to throw it out. You're good, bottle it, wait, share.

    What's w/the old threads?

Same, I like when I read a post, then the exact same question a few pages on. Oh well, sonce I have HBT on my spacephone I'm on here way to much.

    What's w/the old threads?

Especially one of his recipes with no final review. His other threads are a million pages long with multiple people brewing them, oh, and because after 4 90 minutes, and 3 Sam Adams Irish Reds, you look through your subscribed threads.

    Is 5 degrees worth $500?

Duly noted. I've found so many cheap HUGE chest freezers, but at the bottom of my (finished) basement steps its only 24 inches, otherwise id have a fermentation behemouth.

    Is 5 degrees worth $500?

All arguments aside, I never considered getting a dorm fridge, using the guts and building an enclosure. Glad I read through this as I have a narrow staircase to the basement, so I could just build in place.

keeping gunk/hops out of the fermenter

Yooper, that's exactly what I was thinking. Line the bucket, pour it all in, remove, squeeze. I'm clumsy, and I've had hops make it all the way to bottling. Not a bad thing per se, but I hate explaining why my delicious beer is so funky and murky. And I know EVERYONE here uses these as hop...

keeping gunk/hops out of the fermenter

I've got the paint strainer bags, instead of boiling hops IN them, would it be easier to pour the cooled wort THROUGH them into the bucket? They could be sanitized, and since meant to fit on a bucket top. I feel like you'd get a fair amount of aeration as well. Anyone doing this?

    Buy yourself a bench capper!!!

To get the foil off, I presoak in hot water in the sink with some dishsoap, then I do everything over the door of the dishwasher (I'm sure you've read the theory), so I pack 40 or so FK bottles on the lower rack of the dishwasher, most of the labels are off from the soak. Then I just run the...

    Buy yourself a bench capper!!!

And this is why HBT is great. I want to throw my wingcapper out the window, you guys love them. Tomato tomato, potato potato. (Its hard to use that cliche when its typed.)

    Buy yourself a bench capper!!!

Hey I wasn't trying to preach! To each his own of course, its a hobby! I work/own a bar, so I only use the 16.9oz bottles that Franzis Kahner (I know that's spelled wrong, but I'm too hopped up on pain killers to search it) comes in. The wing capper just plain old doesn't work on them, the...

    Buy yourself a bench capper!!!

I like kegs, but I have an enormous thirst, got it from my dad, so bottles make me a more responsible imbiber. I like bottles too, no real reason, I just like bringing a couple to friends and sharing.

    Buy yourself a bench capper!!!

Use the old dishwasher door method for bottling day, and its pretty painless honestly, just have to wait for my 18 month old pet monster to go to bed, or its a fiasco.

    Buy yourself a bench capper!!!

I make all grain, extract whatever. I am not an expert by any stretch, but if you are starting out, brewing for years, whatever, and still using that 'winged' red capper, throw that thing out and get a Super Agata Bench Capper. I got mine on ebay for <$30 and I absolutely and pissed at myself...
