    If you are doing extract you don't need to, but doing AG, you'll need the reactions a long boil provides. protein coagulation, boiling off volatiles etc.

    If you bottled it 3 weeks ago, let it age (lager) for a while. Most of the off odors should weaken.

    And if that is a plastic cube you are fermenting in, I would make sure it was really clean before using it again. If you get another infection in that cube, toss it.

    Pick up the keg from him, rack to it and purge with CO2. Then you have less to worry about regarding O2 pick up.
