    Nitro and a stout tap are definitely the key to "commercially" creamy stout, but including 10-20% flaked barley in your grist will help with body and creaminess in terms of mouthfeel.

    Those guys do make good beer...I especially like both of their rye beers. BTW, they are usually represented at brewfests in the South, at least every one I've been to here in NC. I bet if there's one in your area they'll be at it and you can line up their who repertoire!

    Today is Ash Wednesday, the traditional start of the Doppelbock season

    I'm not Catholic or any other denomination that observes that custom, so I don't give up anything. My wife, OTOH, is Catholic, and I just have to make sure she doesn't give up me during Lent, if you know what I mean.

    Should I rack my lager twice?

    I completely agree. Even once you rack there are still active yeast doing there thing during the entire lagering process, and some lagers like Doppelbocks are lagered a long time, so autolysis isn't really a worry in this case.

    Yep, just wait on it to calm down. There's no set amount of days, really. Some go longer than others. Some people age IPA's longer because they're higher abv so it takes longer for them to mellow, others are perhaps simulating the traditional brewing process to some extent whereby the beer...

    What are your fermentation temps? Belgian yeast usually like it warm and can stall out if they cool off, so I don't think you'll see any ill effects from higher temps depending on how high they were. That may be why you've seen fermentation flare up on occasion, when the yeast was warm enough.
