Orange Wine Must in My Solera

Update: The fermenter shows no signs of fermentation however, it is beginning to form a nice pelicle. The pelicle is white and stringy which I have seen similar pictures but I have not seen it in my solera so far... I'll try to post pics of this soon. My thought is that if it tastes badly I...

    Secondary question?

http://beerandwinejournal.com/can-co2-form-a-blanket/ dcp27 is correct: The link above may help a little. The reason why CO2 doesn't really form the layer, as many people believe, is because any time CO2 and oxygen is in the same container, which always happens, the molecules will bounce off...

    Secondary question?

I'd have to disagree... The beer will form a pellicle to protect against the oxygen. Now don't get me wrong, a smaller headspace and flushing with CO2 can't hurt but I'm my experience you're fine.

Activity of Old Lambic when transferred to fruit.

I've actually just done the same thing. I have always pitched a new starter or fermented with a clean yeast. Im thinking it should be fine but I'm eager to hear others weight in... Good luck at any rate!

Age is carboy or corny keg?

Hi. I've done it before with fine results. I currently use a better bottle for one of my soleras. I've been turning beer out of that better bottle for a little over three years. Just sit and forget about for at least a year. Good luck!

Lambic (BOS, 3rd BOS and Two Golds)

Hi. I hope I'm not too late. As far as aeration, do the same procedure as you always have as it'll be good for the "clean yeast" that will get you going. When the bugs are introduced they'll munch on what the typical yeast does not or cannot. As far as SRM, I wouldn't worry about about that...

Questions and Advice for my Solera

Hi. One is cherries and one blackberry. I am getting a lot of tart from the blackberry and a lot of horse blanket, barn yard-y, funk up front and a lot of mouth puckering sour at finish from the cherry. Honestly, both are sooo good!
