Im not sure what breweries you've been to/worked at, but the one I trained at and worked/working at dont use auger drive system to move grain/wort. Besides that would be extremely unsanitary, you'd never get the proper volume, you cant push wort with an auger system, and if that did somehow...

This, Wyeast has said there smack packs of brett arent made for pitching and you need a big starter or step starter.

Saccharomyces took over and dominated, per say. The Pellicle will return.

Brewed up 10gals today mainly for a kolsch but I split it in half and used the other 5 gals for a Dortmunder and used this yeast. I will say this is the first white labs yeast I've ever got that the vial was almost all yeast slurry, I was impressed.
