    @rhaop most saison yeasts like a bit of heat to bring out the saison funk, I'd try a bit warmer. In fact I brewed my recipe once and fermented it out in my garage when I lived in Phoenix, the ambient temp out there was around 90, it was fantastic!

    If you promise not to tell anyone my secret, I'll let you in on it..... I rarely use Pilsner malt anymore, I mostly use plain 2-row, used golden promise once after buying a sack for doing Scottish ales, and even used Munich malt as a base as well, it's all really good in this recipe!!!!!! :tank:

    I swore I replied to this earlier, maybe I never hit submit.... My experience is this beer is quite consistent, did you follow the same schedule for temps and times? That is one thing I do every batch, for all recipes.... And is a key I've found in the quest for repeatability. :mug:

    I keg my beer, then bottle off the tap for long term storage on a few champagne bottles. Never had issues with oxidation

    That sounds like you are on the right path, I would recommend joining ASH, I was a member when I lived out there, great bunch of homebrewers, and a lot of experienced brew rig guys to help you along. There are homebrew clubs out here but nothing of the caliber of ASH.

    You will have a fine beer at any rate, and then we can see if the efficiency can't be improved through a few changes, usually a finer crush on the grain is the best place to start
