    What is the OG of the beer that you are making? You may be able to get away with 1 vial with option one, if the beer that you are brewing is normal or a smaller beer. Check out Mr Malty.com for a yeast pitching calc. Its what I use for help. Tony

    yes same yeast all batches. If its a low flocculation, you think its not attenuated enough? The final gravity was ok. I cant really tell if it is yeasty, the spices cover up of any off flavors.

    I do not have the recipe on hand, AHS special holiday ale, the yeast is an east coast ale (wlp008). I fermented for two weeks in the primary. (I don't use a secondary anymore.)     Time before bottling

    I would say that you are good to go. I leave mine in the primary for about 10 days, cold crash then keg it when making my wheat with no fruit. With fruit however I leave it in the primary for 7 to 10 days, rack onto the fruit in secondary then bottle/keg after another week or so total about 21 days.

    Does this sound about right? Can I put it in the keg, purge the oxygen and then store?, will it carbonate naturally in the keg or do I still have to force carbonate later? or do I force carbonate to get the proper carbonation, then pull off the co2 and then store it for a later time. Thanks...

    I just bought a 24 qt s/s stock pot on eBay. The inside is a brushed finish not mirrored. Does this matter? It is stainless steel and smooth, but a little worried. I though I was getting a deal but maybe not. Thanks Tony
