    On Day 1 as I was making my first batch of sake, my daughter wanted to look/smell at the rice/koji mixture in the fermenter and she promptly sneezed onto the whole thing. 2 months later, it turned out pretty good despite the extra help from my daughter. Lots of worrying over that one though.

    Anyone brew under a canopy?

    I have brewed many times under a canopy in the rain and have never had any problems. Wind can be a problem if your canopy is not secured. Go for it!

    I have the same freezer and controller. To ferment at 68 degrees I would set my controller to SP of 67*, Diff to 1*, and the ASD to max (12 minutes). The set point is the temperature you want to maintain, the differential is the acceptable range for the controller...so if the set point is 68*...

    You need to look at Ed Worts' Robust Porter in the recipe forum. I think this is pretty much what you are looking for. I tweeked the recipe a little bit to get a very chocolately beer with virtually no coffee flavor as I am not a coffee lover by any means.

    I do my brewing indoors on my gas range (all grain, 5 gallon batches). I have a 5 gallon and an 8 gallon aluminum pot. I do modified BIAB (DeathBrewer's Method). You should read the thread on "Improved StoveTop Boiling". That should give you several ideas on how to make your life easier.

    I am trying to enter a cider recipe into Beersmith, but the when I add the cider to the recipe it asks for pounds of cider not gallons. Is there any way to change this? Thanks.
