    Backsweetening with juice

I've looked around the forum and didn't really see what I was looking for. I've got about 5.25gal in the carboy right now and I saved about 0.75g for backsweetening. My plan is to pasteurize the bottles when I feel the taste is just about right and/or the bottles shouldn't take any more...

    Help me increase brew days

As of now I have a mini-fridge fermenter. I'm bottling on brew days and would like to increase my output. One idea is to buy another johnson control and a fermwrap/brewbelt to have a 2nd makeshift type fermentation chamber. Another option I have is to pull the beer after the fermentation...

    Dropping Mash Temps

I'm pretty sure I know most of the basics of mash temps, but I've decided to try a Ky Common and after a little research around here it looked like a few brewing it were doing 100% sour mash. So what I'm wondering is if you mash at 152 and leave it for a day and a half before sparge, will it...

Is cold crashing a big strain on my fridge?

I've got a sanyo fridge that I use for fermenting. I've got an APA bubbling right now and was wondering if I should/shouldn't just crank the temp down to like 35-40 a day or two before bottling. I was thinking maybe its a strain on the compressor, but maybe I'm just confusing that with...

    Wing a Johnson Temp Croller?

I'd love a little help on this. I've got a 14# extension cord to use for the splicing to my digital a419 controller. The controller has an input side 240 | com | 120. And the output side NC | C | NO. The diagram looks like hmm... Tough to say. Live line to the 120 then the 120 bridges...

    Recommend me some warm ferments.

I'm looking at a 75ish fermentation temp. Would I be safe with pretty much any belgian style? Maybe yeast variety matters as much as brewing style? I was kind of thinking about going with a wit until I get a mini-fridge for fermentation. Any thoughts or links would be appreciated.

First time I'm actually worried about a brew.

I'm moving in like a week or two so I decided to use up what I had. Anyway, I pitched some 002 that was obviously vinegary smelling. It was stored in the vile, in my fridge for like a month. Was this a bad mistake? Should I hit up lhbs and get some recovery yeast in the morning?

My hops are starting too early.

In colorado, we've had one of the milder winters I can remember. This morning, I was in the back yard having my coffee at 9am in early february and had a peek at my hops and noticed they're about to explode. I realize they're hardy plants, but unfortunately as a renter who moves a lot I keep...
