    Man, I love Apfelwein

OK so I have not been on this forum in years.....How many years? probably around 4. Very sad i know, but dental school really killed my brewing life. But I recently found a batch of apfelwein that i made about 5 years ago which was hidden away. And guess what...it is freaking amazing. So...

    Wild Yeast Contamination in Secondary

I figured as much about the flocculation. I guess it just doesn't look great when you see yeasties floating. Tasted fine when I was bottling. I guess I will take taste over esthetics. I've put a couple of bottles in the fridge to see if the yeast will fall out. I guess I will report back...

    Wild Yeast Contamination in Secondary

Hey All, Its been a while since I posted, but I've come across an issue im not so sure about. I brewed a breakfast stout back in June which turned out fine in the primary. After about 2 weeks I racked it to the secondary and added oak chips that had been soaked in bourbon for a few weeks...

    banana taste and maturation

I hear ya, man. If you are sure that you were precise with your temps, then this is an oddity. I've never heard of bottling causing those flavors, only during primary.

    banana taste and maturation

To me, green beer is beer that has just not reached maturity for one reason or another. Many people describe their beers as green. It can be that the hops have not mellowed, it can mean undercarbed, it can mean overly fruity from not maturing. I think and personally believe there is no one...

    Simple Sorachi Summer Ale

I kept the hops vacuum sealed in a freezer avoiding light. I think they are probably fine. Maybe lost a little AAs, but nothing I'm too concerned with. so...maybe this hop schedule would be better? .5 oz @60 min .25 oz @ 15 min .5 oz oz at 5 min Just trying to make something to keep it...

    Simple Sorachi Summer Ale

Sorry for the repost, but I put this in the wrong section by accident. Hi All...Just thinking of whipping up a simple summer ale. I have 2 oz of Sorachi Ace hops from last summer that I need to use and I thought that this would be a good quick fix... 5 Gal Batch: 8# Light American LME...

New 60 qt brew kettle question

Just got a new brewkettle with a hole for weldless fitting :D. Is there anything that I need to attach on the inside of the kettle to help drain if i get a threaded ball valve? I'm just a bit confused on the whole matter of what needs to go on it. Thanks!

    reduce hops for full boil?

just glad to help! Cascade is an awesome aroma hop and I wouldn't want you to lose all the deliciousness if you use 2 oz for a full 60 minutes. The longer you boil, the more aroma is lost. If you want to bitter your beer, great hops like magnum, columbus, and chinook are typically used...

    reduce hops for full boil?

i would hold off and only use 1 oz at 60min, and spread out the other 2 ounces at 30 and 10 min Edit: I feel that 2 oz at 60 minutes, while that would be perfectly fine if you like more bitter beers. But if you want more hop flavor and aroma, u want to add those later in the boil. John...

    Lemon Zest in a Kolsch

i would also recommend washing the lemon very well. There is a wax that covers the outside, make sure you remove it with a thorough washing.

    Is my beer ruined?

Depending on what style of beer you brewed, it sounds like you had some serious blow off. We need a little more info about what you brewed to determine what is wrong exactly...
