    Holiday Ale?

    I usually stick more with IPA's but SWMBO wants a beer for Christmas time. Anyone ever tried the Winter Ale or the Happy Holiday Ale from Midwest? Or have any other suggestions? Still doing extract and partial kits, not doing all grain yet.

    My first brew was 2 wks in the primary, 2 in the secondary and has now been in the bottle for 4 days. If I was to sample a bottle now: Would there be any carbonation? Would the flavor be off?

    Fermentation Reactivation?

    I transferred to my secondary yesterday. The brew had been in the primary for almost 2 weeks. I had the same gravity for 4 days before transferring. Why would it start bubbling again after transferring to the carboy? Only bubbling once every 20 seconds for about a day.

    Temperature changes while fermenting?

    The room temp seems be hovering around 70. Yesterday afternoon the temp on the stick-on thermometer was 68. This morning the 72 was beginning to glow and 70 was still glowing.

    If a recipe (Nut Brown Ale) calls for .5 oz Fuggle Hops for the last two minutes, and the package came with 1.0 oz of hops, should I use the entire package for the last two minutes? or only half?
