    To close the loop, this is the SMASH I brewed with yeast cultured from SNPA. It's Maris otter and cascade. Could be more clear and yeast didn't hold to the bottom of bottles well, but has real nice flavor and explains why I use these ingredients so much.

    Cultures from 3 bottles of SNPA. Stepped up from 2 ML, 15 ML and 150 ML. Using 1.020 and 1.035 wort with small pinch of yeast nutrient at each step. Next step would be 1,500 ML.     When you say you "drain what I can then tilt" I interpret that to mean you have raised the unit off the floor so wort can flow by gravity into the fermenter. Is that correct? I'm curious how folks transfer wort: by gravity or pump and why.
