    Brewing Classic Styles implies that beech wood is traditionally used in Germany. Oak might be a good substitute, but apparently it's a little stronger than beech.

    I had a similar problem with a beer once. If there is a lot of sediment, they can act as nucleation points for the CO2 in solution causing it to foam like crazy. I'd try chilling another bottle that has less sediment and seeing if that one gushes.

    There's an Amazon seller that sells brass 1/2" to 3/4" female npt fittings (among others). Throw in a couple of these and you should be able to connect garden hose to the in and out sides of the chiller.

    An alternative to filtering the tap water first, you can treat it with a Campden tablet (either sodium metabisulfite or potassium metabisulfite). It will get rid of the chlorine or chloramines that may be in the water.

    I've used it once on an imperial stout (probably not necessary at 9%). Unless there's not much viable yeast left in your saison, it's probably not necessary.

    Short Circuited Brewers on youtube is good if you're into electric brewing. I believe he's still on a bit of a hiatus from moving to a new house though. Also DrHans Brewery and Fast Homebrew. Fast Homebrew doesn't generally go into the details of the process but the production is entertaining...
