Slow start from repitched frozen yeast

I've been brewing cider for about 3 years and mead for 1 year. My favorite yeast is Nottingham and I decided to start freezing my harvested yeast using the method posted on HBT found here: https://www.homebrewtalk.com/freezing-yeast.html This has worked successful for quite a few brews by...

How many gallons of cider in 2017

    Sweetening and bottle conditioning questions

I think I will try both option 1 and option 2 while using the hydrometer to track fermentation. We'll see how it goes from there.:rockin:

    Sweetening and bottle conditioning questions

Thanks MarkKF, but unfortuantely I've yet to find a non-fermentable that did not cause my wife or myself any health reations. :( ...or even taste good.

    Sweetening and bottle conditioning questions

I wish I was good enough to send bottles to a comp! I understand I can mix at serving ... but wouldn't that lack carbonation?

Do you have the plans for that pressure gauge do-hicky? Or even a link to where I can purchase the gauge?

    Sweetening and bottle conditioning questions

I live in the south and 1 cup of sugar per gal is sweet ... 1.5-2 cups per gallon is diabetes. :D BTW, We use the organic pure cane sugar.

    Sweetening and bottle conditioning questions

What's the formula for carbonation? (amount of sugar per volume of cider = what percent of carbonation) ...and what's the formula for sweetness? (amount of sugar per volume of cider = what level of sweetness) I assume sweetness can be measured as brix, right?

    Sweetening and bottle conditioning questions

So, I was happy to see a couple of recent similar questions in the forum but wanted to ask my question since I felt that this question was fully answered. I’ve been brewing cider for about a year and have had some great results … and some pretty lousy results (Learning from both experience...

Looking for a fast (3-4 week) easy drinking Hydromel recipe

I agree with you about trying to get the best taste since I'm using high grade honey. I'm going to pick up some fermaid O and Potassium carbonate. Also, while reading up on the Wyeast 1388, I see that it has low flocculation. I've yet to cold crash any of my brews. How much does it affect...

Looking for a fast (3-4 week) easy drinking Hydromel recipe

So, I do have cascade hops on hand. I only have DAP nutrient and energizer, but I may just have to order some Fermaid O. The HBS didn't carry it but they could order it. The same with the Wyeast 1388. They didnt carry it but they could order it. The did, however carry WhiteLabs liquid...

Bee Pollen NOT as a nutrient replacement....

So, I'm new to mead/hydromels also. But I am a beekeeper that practices "treatment free" beekeeping. We use the crush and strain method to extract honey so I have a lot of crushed up sticky comb at the end of each honey harvest. I usually melt down the wax, and sell it. But I thought that I...

    Freezing test tubes of yeast

This is the guide that I use. https://www.homebrewtalk.com/freezing-yeast.html But I didn't use test tubes. I used breast milk freezer bags. They were cheap, already sterilized, made to be freezable, and are clearly marked with volume amounts.

Looking for a fast (3-4 week) easy drinking Hydromel recipe

Thank you LOR! I actually found your site and am interested in this recipe. Is the tea necessary? Not that I think it will taste bad, (It actually looks quite delicious) I just want to be able to distinctly taste the honey that we've harvested off of the bee yard. Plus I'm new to the...

Looking for a fast (3-4 week) easy drinking Hydromel recipe

I'm a beekeeper and cider brewer. I've tried brewing some of my honey and, apparently, made some hydromel that my wife loved! I have family coming in about 3-4 weeks and I'd like to make a very drinkable hydromel (Preferably without any fruit or any other additives if necessary.) Any ideas...

Do I need yeast nutrient/energizer for mead?

So if I'm pitching a 100 mil slurry of yeast, will I need anything else?

Do I need yeast nutrient/energizer for mead?

Is there something I can use to supplement? I usually use L.D. Carlson stuff but I'm out, and I want to start a batch tonight... and the brew store doesn't open til Wednesday.

Do I need yeast nutrient/energizer for mead?

So I tried a one gallon batch of mead using harvested Nottingham yeast from my last cider brew and it worked brilliantly! However, I used some nutrient and energizer. The question I'd like to submit is: Is the nutrient and energizer really needed? Or can I use something in place of these two...

    So, what should I expect?

Bottled my "mead" and pasteurized it. It's about 5.5% ABV and we love it. It's sweet and very satisfyinging since it came from the wild swarm that we caught. Cheers!

    So, what should I expect?

I understand what you're saying, but my cider is from store juice. (Don't hate, I live in coastal NC and I'm not driving hours for apples) As for honey, we practice natural beekeeping and let the bees gather what's in season. It's actually very delicious. I dont have a keg set and not able to...
