    Excellent, thank you for the responses. I remember enough chemistry from college to be dangerous and wanted to make sure there wasn't something else I should be considering/missing. I do run the water through a sediment filter.

    Kegs: 1 handle or 2?

    I have both and prefer the single handle kegs. The black rubber rubs off and bugs me. I'll be building or buying a carboy/keg washer soon so not sure if the handle orientation will matter or not.

    One thing that is bugging me is their Q&A mentions 2.5 billion cells per ml. The pure pitch package contains 35ml. So how can it be over 100 billion cells as stated on the pure pitch package? What am I missing?

    You could add the 10 minute too, depends on what you want to do. Sometimes it's just experiment and see what you prefer. I've been liking 2 oz at 10 min, 3 oz at flameout for 15 min, chill to 175F, add 3 oz more for 15 min. Dry hop with 4 oz. I've not done longer stands yet but I am curious.

    I definitely want to try the cip ball in the middle of the mash. Wort will flow through a bag, just not full blast on the pump. I'm convinced even temps are dependent on how fast you can recirculate the wort.
