    Some concentrates have preservatives. The Safcider yeast has been very reliable for me.

    My life is somewhat empty….so I fill the void by drinking beer and looking stuff up…. The term "riffraff" originated in late Middle English around the mid-15th century, derived from the Old French phrase rif et raf, which meant "every particle, things of small value" or "one and all".

    Go for it and run a small, one or two gallon batch to try it.

    Yeah, was able to get up on some pretty dramatic summits. I put your numbers into brewers friend, as yes as you stated above your efficiency is pretty low. If you get a cheap 16 qt pot from Walmart, you can use that as a side pot and do a dunk sparge and bring your numbers up a little.

    I started with BIAB in a Cooler, then did fly sparge BIAB, got a keggle, hardly used it, now I downsized to 3 gallon in electric AIO, with a dunk sparge in side pot.     In my (pretty old) mind, I’m thinking “old school” recipes would include anything before like 2010, which is when I started getting a little more serious about brewing.

    Growing Cascade bine in S Jersey is a hopless endeavor

    Like someone else said, not all varieties will do well in all locations. I have Brewers gold, which grows like crazy will little care, while my centennial and cascade barely grow at all.

    I started down the road of re-visiting some old school recipes about 2 years ago. “Tasty” Mike Mcdole’s Double IPA and Janet’s Brown ale come to mind along with some more obscure selections like Da Yoopers house Pale ale and a clone of TenFidy imperial stout.

    Glad to see brewing competitions haven’t faded away. Also, I must say that’s a brilliant marketing concept, using actual brewing competition scores to increase perceived value of beer ingredient kits.

    So I’ve been making cider and wine for maybe 30 years, off and on , beer about 20. Your post is a little confusing to me since you have to grind the apples first, then put the resulting pomace in a press to get the juice out. There are lots of ways to do that, and lots of you tube videos...
