    My avitar

I suppose many of you are too young to remember Foghorn Leghorn but he is a cartoon rooster who is always trying to teach the young-uns something and always trying to get that damn dog. He is not politicly correct and often blunt and often wrong. He doesn't mean any harm, just trying to help...

Yeast Starters (how much do you want to know?)

Yeast starters, more than you ever wanted to know. http://www.maltosefalcons.com/tech/MB_Raines_Guide_to_Yeast_Culturing.php

    Hefe Weizen in Secondary

Is there a reason to leave it there for more than a week? I'm not expecting it to clear and I'd like to get to drinking it sooner if I can. So what do you think? 1 week primary and 1 week secondary 2 weeks in bottles?

    WLP029 Kolsch Yeast anybody?

Have any of you used this yeast before? I started the starter yesterday evening and was surprised to find it alread folocculating this morning. Starter was foaming but looked like cottage cheese in the bottom when I pitched it about 2 1/2 hours ago. I just checked the carboy and damn this...

First All grain is in the tun

Well I just mashed in about 20 minutes and it's going nicely. I decided to go with a Kolsch today and it's seemed easy enough. 9.5 lbs of grain. Single infusion mash, Strike in at 163, Sacrification Rest at 152 for 1 hour and Mash-out/batch sparge in at 183, rest 10 min at 170 and...

    What a Girl!

Yes, I'm bragging on my new wife. I went home for lunch and got a surprise. Get your minds out of the gutter boys. She asked me if I'd been in to the computer room. I said no. Well she says, you've got someting in there. So I walk in there and in front of my keyboard is a brand new CD...

    How's your brew day going?

Mine's progressing nicely. I've got the kettle at a rolling boil and the first addition of hops in, the timer is set and I'm drinking a mighty fine 80/- if I do say so myself. I'm sadly down to my last 4 bottles. I'm goint to set 2 back to try next spring so that I can see how they've aged...

    Beer Swap completed, Critque

OtherWhiteMeat and I did a swap of brews. I sent him a couple of bottles of my Scottish Export and he sent me a couple bottles of his Apricot Weizen. This is the feedback he sent me: "I just took the bottles to a gaming session at a friends last night. I had everyone there try it. Most...

    Never Say Never

Well, Saturday 10/22/05 was my wedding day. My homebrew was a hit with those who like beer and brought polite comments and wrinkeled noses from those whose palates are conditioned to American light beer. My youngest brother really liked it a lot but caught hell from his SWMBO and my mother...

    secondary regulator

My fridge in the garrage will hold 2 kegs plus a co2 tank. The only problem, I want to keep 2 kegs with different carbonation levels going at the same time. The regulator off of my tank will be set to the higher pressure and split to run to the keg with higher carbonation and the other split...

Which Wheat extract do you use?

Brands please. I've been searching for ingredients to brew a Weizen but not sure which way to go. I see that Ireks is not available any more. Williams Brewing's DME uses American wheat and barley malts. I want to get as close to a true Bavarian Hefe as I can. Let me know what you use.

    Yep

A cowboy in Texas got pulled over by a State Trooper for speeding. The trooper started to lecture the cowboy about his speeding, and in general began to throw his weight around to try to make the cowboy feel uncomfortable. Finally, the trooper got around to writing out the ticket. As...

    Pin Lock Kegs ????

Anyone use pin lock keg? I made a purchase of 2 soda kegs on E-bay for the great price of $10 each. http://cgi.ebay.com/ws/eBayISAPI.dll?ViewItem&rd=1&item=4406439112&ssPageName=STRK:MEWN:IT The were listed as having Ball Lock connections. Well, I got them in the mail yesterday and I'll...

    OK Hopheads try this one.

http://www.youngs.co.uk/ProductPage.aspx?pageID=11&&productID=19 I had one of these today for the first time and at first sip, I wasn't too sure but once my palate adjusted, I really liked it a lot. This is an extremely full flavored beer. The complexity is amaizing. Give it a try.

    Building a mashtun

Is a 5 gallon igloo cooler with a floor manifold sufficient for 5 gallon batches? I'm ready to step over into the all grain arena and I've already got several 5 gallon coolers but no 10 gallon. Anyone ever maxed out a 5 gal cooler making a 5 gal. batch? If so, what gravity were you trying...

    Working on first keg.

Got my first keg and am working on getting it ready. I've got it completely disasembeled except for the popet valve. How the heck do you get it out of there. It looks like it's pressed in. I don't want to force it out unless that's the only way. BTW the keg is a Firestone Challenger VI...

What size bottles do you use?

I despise 12 oz bottles. I mean there OK if your swiging longnecks down at the dance hall but when I'm pouring into a glass and savoring some ale, I want a full to the top imperial pint. That's a full 20 oz. Needless to say, I'm going to be using 22 oz bottles so I can still get the full...

    Lagering questions.

I'm already planning to make a Marzen next Feb. or Mar. and working out the details to do it right. I read that after 6 months at 33 degrees, there will not be enough yeast to carbonate naturaly unless you repitch with new yeast. Does lagering work if the beer is already carbonated? Can...

    Sediment in Secondary

I've had my first batch of Scottish Export Ale in the secondary for a week now. The airlock has been still for 4 days. I had put another small 2 gal batch in primary fermentation a week ago and let it finish out, the krausen subsided and I racked that on top of what was already in the...
