    Thanks for the tip. I kept it lower. 2.75 volumes. Regular beer bottles saved up over the years and one growler. I'm keeping it about 68F consistently in my basement for 2 weeks or so.     This is a great list. Can I join? Enjoy it whatever you decide. I've wanted to try the maharaja myself. It is supposed to be fantastic. The only one on the list ive tried is the Goose Island Matilda. It is a very good beer. All of the goose island sisters are very good. Can't go wrong with them.

    Another question. Are you covering your carboy at all or is it in a dark room where sunlight can't get to it? If not, cover it ASAP. UV light will pass through the glass and ruin the beer.

    Yeah, you'll get nasties and yeasties in the water. It'll be fine. There is still plenty of yeast in the fermenter. Otherwise you wouldn't be overflowing with krausen.     I just brewed a stout myself and yes the fermentation went nuts. To the point where my blowoff tube made enough of a mess that it built up and spilled over and made a mess on the floor. Good luck and keep an eye on the bucket of Sanitizer.

    2 out of 3 didn't carbonate

    How much priming sugar did you use? Also, how much head space do you have in each bottle? I don't think that will change the carbination too much but it might make it take longer
