Help! Lost a gallon during fermentation

Did a nut brown ale today when I set fermenter up with blowoff tube I stuck the blowoff tube a bit too far in when I check back on it about an hour later there was beer flowing out of the tube. Can I add water at any point? It already started to ferment.

How long is too long in secondary?

How long is too long letting your beer sit in the secondary before bottling/kegging? Also what if you dry hopped?

Beer has as a yogurt flavor to it, why?

I already bottled them up. It didn't taste this way at all after the secondary so t must have gotten infected during bottling. I tried a couple and so did my friend and they all tastes that way. Can I condition it out?

Beer has as a yogurt flavor to it, why?

I brewed a red ale with all spice and and Belgian candi syrup...it has a weird yogurt taste to it. Could it be an infection in the beer or is it the all spice and syrup acting together.
